
BLACK BEAN BURGER
Recipe adapted from For Love and Lemons
Servings: 6
Prep Time: 10 minutes (if using pre-cooked beans)
Cooking time: 12 minutes
Ingredients:
1 large egg
1 cup panko bread crumbs
3 cups of beans, dried or cooked (see instructions below)
1/3 cup grated yellow onion
2 garlic cloves, minced
2 chipotle peppers from a can of chipotles in adobo, diced
DIRECTIONS
Prepare the beans:
Optional: Soak the beans in water for 4 hours and up to overnight, this will help cook the beans evenly and may aid in digestion.
Sort and wash thoroughly before cooking. Saute chopped onions and minced garlic, then add 1 cup of beans and 3 cups water. Season with cumin and salt and top with chopped cilantro. Simmer for 30 minutes or until tender.
Prepare bean burger:
Combine the beans, onions, garlic, and chipotles in adobo sauce. Season to taste with salt, pepper, and cumin.
Use a large fork or potato masher to mash the mixture until it starts to hold together but still has visible chunks of black beans. Fold in the egg, followed by the panko bread crumbs.
Form the mixture into 6 patties, about a heaping 1/3 cup each.
Cook via grill or on the stovetop in a cast iron skillet until well-charred, crisp on the outside, and tender in the middle.
Enjoy either on its own, in a grain bowl, or with your favorite burger toppings! We’re partial to guacamole, red onion, and pepper jack cheese.
